Ingredients You’ll Need

For the Frankie Roti (Wrap):

  • 2 cups wheat flour (atta)
  • 2 tbsp all-purpose flour (maida)
  • 1 tbsp oil
  • Salt to taste
  • Water (as required)

For the Aloo Filling:

  • 3–4 medium-sized potatoes (boiled & mashed)
  • 1 medium onion (finely chopped)
  • 1–2 green chilies (chopped)
  • 1 tsp ginger-garlic paste
  • ½ tsp turmeric powder
  • 1 tsp red chili powder
  • 1 tsp garam masala
  • 1 tsp chaat masala
  • ½ tsp cumin seeds
  • 1 tbsp oil
  • Salt to taste
  • Fresh coriander leaves (finely chopped)

For the Frankie Assembly:

  • 1 small onion (sliced into rings)
  • 1 carrot or cucumber (julienned, optional)
  • Green chutney (mint-coriander)
  • Tomato ketchup or chili sauce
  • 2 tbsp butter (for toasting)

Step-by-Step Recipe

Step 1: Prepare the Roti (Wrap)

  1. In a bowl, mix wheat flour, maida, salt, and oil.
  2. Add water gradually and knead into a soft dough. Cover and rest for 20 minutes.
  3. Roll out thin rotis and cook them on a hot tawa until lightly golden on both sides. Keep aside.

Step 2: Make the Spicy Aloo Filling

  1. Heat oil in a pan, add cumin seeds and let them splutter.
  2. Add onions, chilies, and ginger-garlic paste. Sauté until golden brown.
  3. Add turmeric, red chili powder, garam masala, and salt. Stir well.
  4. Add boiled and mashed potatoes, mix thoroughly, and cook for 3–4 minutes.
  5. Finish with fresh coriander leaves and chaat masala. Allow to cool slightly.

  1. Place a roti on a flat surface and spread a layer of green chutney.
  2. Add some spicy aloo mixture in the center.
  3. Top with onion rings, carrot/cucumber strips, and a drizzle of ketchup or chili sauce.
  4. Roll the roti tightly to form the Frankie.
  5. Toast the Frankie on a tawa with a little butter for that authentic street-style flavor.
